This recipe is one of my family’s favorites. It’s very cost effective, very satisfying, and sure to please even picky eaters.
This recipe will feed my family of (6) for one meal now, plus there is enough chicken left over for a whole other dinner, which I freeze for later. So if you have 8 to 12 people in your family, this recipe will last you for one meal.
Large bag of corn tortillas (I pay $1.50 for a bag of 100)
(2) Rotisserie Chickens (I buy mine from Sam’s Club for $5 each)
(2) Cups of shredded cheddar or Mexican blend cheese (I pay $2.40 from Walmart)
(1) Tomato, diced ($.60)
(1) Small container of sour cream ($1.20)
(2) Tbsp. Fajita seasoning
(2) Tbsp. Taco seasoning
Oil for frying
TO MAKE CHICKEN: Pick all meat of the bones, discarding skin. Put all of the chicken in a large sauce pan. Add enough water to fill half the pan (about 6 cups, give or take). Add seasonings, and bring to boil on medium high heat. Boil meat until most of the water is gone. Serve family style, in a large bowl.
TO MAKE TOSTADAS: In a small frying pan, pour in about an inch of Canola oil. Heat over medium high heat until ready for frying. Fry (1) whole corn tortilla at a time, just until brown. Drain on plate lined with paper towels. Continue until there are enough tostadas for everyone in your family. Here is our rule of thumb:
(1) tostada for preschoolers
(2) tostadas for Mama and girls
(3) tostadas for Daddy and boys
Serve family style, on a platter.
Put cheese, diced tomatoes, and sour cream on the table in individual bowls. Let each family member serve themselves by putting cheese on the tostada first, then chicken, then tomatoes, and then sour cream.
Yummy……..For about $16.00. you can feed a family of 12, and no one will walk away hungry!
